Chicken Meatball Appetizers
Yield: 2-1/2 dozen
Ingredients

boneless, skinless chicken breasts, cooked and minced

onion, finely chopped

|

tablespoons |
celery, finely chopped
|
|
|

tablespoons |
carrot, finely chopped
|
|
|

tablespoons |
dry bread crumbs, finely chopped
|
|
|

|
egg white
|
|
|
| 1/2 |
teaspoon |
poultry seasoning
|
|
|
|
|
pinch pepper
|
|
|
Directions:
In a bowl, combine all ingredients; mix well. Shape into 3/4 inch balls; place on a baking sheet that has been coated with nonstick cooking spray. Bake at 400 degrees for 8-10 minutes or until lightly browned.
